We’re huge fans of exotic flavours! And definitely, Middle Eastern is one of our must-haves once a week! This is a delicious, healthy recipe of a Hummus Bowl made by @healthyfitnessmeals

HOMEMADE HUMMUS
1 chickpeas can (15 oz), rinsed and drained
1 garlic cloves
2 Tbsp olive oil
2-3 Tbsp water
2 Tbsp fresh lemon juice
½ tsp of each ground cumin and smoked paprika (some more to sprinkle)
Sea salt and freshly ground black pepper, to taste
Optional:
1 Tbsp Tahini
REST OF THE BOWL
2 Cups cooked quinoa
1 Cucumber diced
2 Cups of cherry tomatoes, halved
A small bunch of parsley, chopped
4 onions, thinly sliced
1 small red onion sliced
4 Tbsp of Greek yogurt
2 Tbsp of olive oil
3 Tbsp of red wine vinegar
Sea salt and freshly ground black pepper, to taste
PREPARATION
1. Place all hummus ingredients into a food processor and pulse a few times until it’s smooth and well combined.
2. To assemble the bowls, divide the cooked quinoa among 4 bowls, add cucumbers, tomatoes, onions, a spoonful of yogurt, and a hummus dollop. 3. Sprinkle with paprika, sea salt, freshly ground black pepper and add a drizzle of olive oil and vinegar. Enjoy!
