Quinoa Sweet Potato Bowl

INGREDIENTS

  • 1 cup of QuintaQuinoa, cooked
  • 1 sweet potato, square chopped
  • 2 scallions, finely chopped
  • ½ cup of cooked chickpeas drained and rinsed
  • ¼ cup of red cabbage, thinly sliced
  • ⅓ cup of crumbled feta cheese
  • ¼ cup of almonds, toasted and chopped
  • 2 cups of baby salad greens
  • Juice of ½ lemon
  • Olive oil, for drizzling
  • Salt and freshly ground black pepper
  • Optional: chilli powder if you want to spice it up!

PREPARATION

1. Preheat the oven to 400F and line a baking sheet with parchment paper. Place the sweet potato cubes and toss the oil all over them, seasoning with salt and pepper. Take it to the oven and roast until the cubes are golden brown, 25 to 35 minutes.

2. In a large bowl, place the roasted sweet potatoes with chickpeas, cooked quinoa, scallions, cabbage, feta, almonds, and greens. Drizzle the olive oil, lemon juice. Add more salt, pepper and lemon juice if you wish. Toss everything and… Voilà!
