INGREDIENTS
- 1/4 cup of cooked Quinta Quinoa
- 3 cups of diced watermelon
- 1 tsp of lemon juice
- 4 sprigs of fresh mint, leaves removed and finely chopped
- Pinch of salt
PREPARATION:
1. Add the cooled quinoa, watermelon, lemon juice, mint and salt into a large mixing bowl. Gently toss the salad together until all ingredients are combined.
2. Serve cool or chill in the refrigerator for 1/2 hour. There’s nothing as the sweet and fresh flavour of watermelon!
