INGREDIENTS
- 1/2 cup of cooked Quinta Quinoa
- 1/4 cup of shredded red cabbage
- 1/4 cup of diced red bell pepper
- 1/4 cup of grated carrots
- 1/4 cup of corn kernels
- 1 green onion, sliced
- 1 avocado seeded, peeled and diced
- Optional: 1/4 cup of chow mein noodles
FOR THE SESAME VINAIGRETTE
- 6 tbsp of rice vinegar
- 1 garlic clove, pressed
- 1 tbsp of each sesame oil and sugar
- 1 tsp of each soy sauce and grated ginger
PREPARATION:
1. Let’s start with the vinaigrette: whisk together the vinegar, pressed garlic, oil, sugar, ginger and soy sauce in a small glass bowl.
2. In a large bowl, combine the cooked quinoa, cabbage, bell pepper, carrots, corn, green onion and avocado.
3. Pour in the quinoa bowl the vinaigrette and mix everything with a wooden spoon.
