We’re focused on achieving our 2021 resolutions! And one of them is, of course, finding the most nutritious and delicious recipe EVER. Sometimes, “granola” sounds “meh,” but try out mixing it with chocolate and #QuintaQuinoa, it will blow your mind! This recipe from @thelemonbowl has earned a spot on our TOP recipes of this year!

INGREDIENTS
- 1 cup of Quinta Quinoa uncooked
- 1 cup of oats
- ½ cup of chopped walnuts
- ½ cup of each chia seeds and flax-seed meal
- ⅔ cup of creamy natural peanut butter
- ½ cup of Maple Syrup (okay, okay, honey works too)
- 1 tsp of ground cinnamon
- 1 tsp of vanilla
- ¼ tsp of salt
- ½ cup of chocolate chips
INSTRUCTIONS
1. Preheat the oven to 350F. Line a baking sheet and spread the quinoa, oats, walnuts, chia and flax seeds—Bake for 10min.
2. Meanwhile, prepare a glass baking dish with plastic wrap, and cover the wrap with cooking spray.
3. Place a small saucepot on the stove and set it over low-medium heat. Melt the peanut butter and maple until it’s liquid-smooth. When you see bubbles around the edge, remove the pot from the heat (be careful: we don’t want it to boil!). Add cinnamon, vanilla and salt, and whisk it all together.
4. In a large bowl, mix the toasted quinoa, oats and seeds with the peanut butter mixture, using a rubber spatula. Let it cool for 5-10min, and then stir de chocolate chips.
5. Pour the mixture into the prepared glass baking dish. Use the spatula to spread evenly. Cover again with plastic wrap and take it to the refrigerator for at least 2 hours.
