Vegan Quinoa Pizza Bites

Did anybody say pizza bites? Let’s face it; nobody can resist pizza bites! Pizza is just one of the best and most delicious dishes in the whole world (Thank you, Italy!). So, just because we know how much you love pizza in any form or shape, we’ll share this fantastic recipe by @jessicainthekitchen.

INGREDIENTS:

  • 1 1/2 cup cooked Quinta Quinoa
  • 1/2 cup vegan or regular shredded cheese + 2 tablespoons of cheese
  • 1 flax egg or egg
  • 1/4 teaspoon salt to taste
  • 1/2 teaspoon ground pepper
  • 3 tablespoons of marinara sauce
  • 1/2 teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes optional
  • Marinara Sauce for dipping

PREPARATION:

1. 1 1/2 cups of cooked Quinta quinoa

2. Preheat oven to 400 ° F/ 205° C. Grease a 12 mini muffin tin pan OR line it with parchment paper with strips over the sides.

3. Mix all of the ingredients, except the extra 2 tablespoons of cheese.

4. Put a tablespoon into each muffin tin, packing them in. Bake for 12-15 minutes.

5. Remove from oven and top with remaining 2 tablespoons of cheese. Broil for about 30 seconds to 1 minute (watch out, they burn easily).

6. Allow to cool on a wire rack for about 15 minutes and then remove from pan.

7. Serve with Marinara Sauce.
