Quinoa Buffalo Tofu

There’s something about jar salads that just works every time! We love how quick and tasty they are!! So, today we bring you a delicious Buffalo Tofu Mason Jar Salad, shared by @simplyquinoa. We hope you guys like it!

INGREDIENTS:

For the salad:

• 1 cup extra firm tofu, cubed

• 1/4 cup buffalo sauce

• 1 cup chopped celery

• 1 cup shredded carrot

• 1 cup chopped cherry tomatoes

• 4 cups romaine

For the dressing:

• 2 tablespoons tahini

• juice of 1 lemon

• 1/2 teaspoon garlic powder

• 1/2 teaspoon salt

• water if needed

PREPARATION:

1. Start by tossing the tofu and buffalo sauce together in a small bowl. Set aside.

2. In a separate small bowl, whisk together the salad ingredients.

3. Stir together and add a splash or two of water if needed to thin it out. Divide the dressing between the two mason jars. 4. Assemble the salad in layers. Start with the tofu on the bottom, followed by the celery, carrot, tomato, and top with the romaine. Seal the lid and store it in the fridge until ready to eat. When ready to serve, simply pour the contents off the jar into a bowl (or not) and enjoy!
