2 cups of #Quinoa (cooked in whatever you want: water, chicken, or vegetable broth. Just add the orange zest when you’re preparing it)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups fresh spinach, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
2/3 cup of dried cranberries⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of shelled pistachios⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 butternut squash, peeled, seeded and cubed⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 red onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 orange (you’ll need only the zest)⠀⠀⠀⠀⠀⠀⠀⠀⠀
3–5 cloves garlic, with the peel still on⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of vegetable oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and pepper to your taste⠀⠀⠀⠀⠀⠀⠀⠀⠀

PREPARATION⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Preheat the oven to 425F. Prepare a baking sheet, covering it with aluminum foil.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Place the butternut squash, onion, and garlic cloves on the baking sheet, and toss over the oil. Make sure everything is very well coated with it—season with salt and pepper. Take the sheet to the oven and roast for 30 min. Once it’s done, take it out and set it aside. When it’s cooling down, remove the garlic’s peels.⠀⠀⠀⠀⠀⠀⠀⠀⠀
