INGREDIENTS:
2 cups of #QuintaQuinoa (cooked in vegetable broth)
3/4 cup of pecans, chopped and toasted
3/4 cup of dried cranberries
1/2 cup of green onions, diced
1 onion, diced
2 celery stalks, diced
2 pears, core out and diced
1 orange (juice and zest)
2 tablespoons of olive oil
2 teaspoons of honey
1-2 teaspoons of sunflower oil
Salt and pepper up to taste
PREPARATION
1. Set a skillet on the stove, and heat the sunflower oil over medium-high heat. Add the onions and celery, and cook until the onion is tender and transparent. Remove from the heat.
2. In a bowl, add the Quinta Quinoa, onion, celery, pecans, cranberries, pears, and green onions. Using a wooden spoon and stir everything.
3. In a glass cup, whisk the olive oil, orange juice, zest, and honey. Add the salt and pepper, and correct if needed.
4. Toss the salad with the dressing and let it sit for a few minutes before serving. Who said salads were boring? Not us, not if it has Quinta Quinoa included!
