Time: 40 min ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Servings: 4 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Difficulty: easy ⠀⠀
⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of uncooked #QuintaQuinoa, rinsed and drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1+1/4 cups of broth (veggie or chicken will work well) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of steamed and chopped kale stems ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of breadcrumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 whisked L eggs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 sliced onions ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup of Parmesan cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 garlic cloves, finely minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon of salt and freshly ground pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Optional topping: avocado, cilantro or extra parmesan cheese
Preparation: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1.Let’s start with cooking the Quinta Quinoa in the broth: add both ingredients to a heavy-bottomed pot, bring it to boil and then let it simmer for 12-14minutes. Turn off the heat, add the kale (don’t stir), cover the pot, set aside for 10 minutes, and then stir and cover it again. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.Using a big bowl, add the Quinta Quinoa and the breadcrumbs, onions, parmesan, garlic, eggs, salt and pepper. Mix everything with a wooden spoon or, if you’re feeling like it, with your bare and clean hands. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.Take the mixture (you can help yourself using a spoon) and form the patties as big as you want them. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4.Place a large skillet and pour the oil, set the stove at medium heat and let it get warm. Then add the patties carefully, cook each side for 5-7minutes, or until they get a nice, brown tone. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
