Quinoa Mac and Cheese

Okay, let’s be honest: not only kids are huge fans of the good, the classic, the delicious #MacAndCheese, right? We went to a whole new level and brought you a way to have this lovely classic recipe with our favourite ingredient: Quinta Quinoa! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Cook Time: 30 mins ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of #QuintaQuinoa uncooked, rinsed and drained ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1+1/4 cups of water 1 cup of cheddar shredded cheese (or your preferred kind of cheese) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of non-fat milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 teaspoons of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of onion, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 garlic clove, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 L eggs ⠀⠀⠀

Preparation: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. preheat oven to 375F and prepare an 8×8 baking dish; you can use non-stick cooking spray or parchment paper, whatever you have in hand. ⠀

⠀⠀⠀⠀⠀⠀⠀⠀
2. Set a heavy-bottomed pot on the stove and heat the olive oil over medium heat. When it’s hot, add the onion and garlic and sauté until onion is tender and transparent; remember to stir with a palette so it doesn’t burn. Add the Quinta Quinoa and keep stirring until it’s golden brown coloured; it may take a few minutes. Add the water, and, when it boils, reduce the heat to low and let it simmer for 12-14minutes and then remove from the stove. Let it cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

3. Using a big bowl, whisk the eggs and milk until it’s mixed. Add the Quinta Quinoa and half of the cheddar. Pour the mixture into the baking dish and top with remaining cheese. Take it to the oven, and bake for 30 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
We love this recipe! It isn’t only delicious, but you can notice it’s a bit healthier than the usual Mac&Cheese, which is excellent!⠀⠀⠀⠀⠀⠀⠀⠀⠀
