Quinoa with Milk Dessert

Cheating on your healthy diet doesn’t always have to be a big deal, but it is better to cheat with something yummy AND nutritious.

So, what about making a rice pudding but instead of rice…we use #QuintaQuinoa? See below!

Prep: 50 minutes
Servings: 4
Difficulty: Medium

Ingredients:

100gr #QuintaQuinoa
200ml of water
850ml of milk
1 lemon
80gr of sugar or sweetener (you can change it to your taste!)
Salt to your taste (you won’t need more than a pinch)
Cinnamon stick
Ground cinnamon

Directions:

  1. The first thing to do when cooking a recipe that includes quinoa is washing it well until the water comes out clear.
  2. Put it in water and let it boil. Simmer for some minutes until liquid is absorbed.
  3. Add the cinnamon stick, a pinch of salt and a little lemon rand (be careful not to get the white part of the lemon).
  4. Add around 750ml of milk and let it boil while stirring.
  5. Simmer and keep stirring for 45 minutes, so it doesn’t stick to the bottom.
  6. Add sugar and mix.

Remember, the essential part of this recipe is the final texture. If you want it to be more liquid, you can add more milk (you still have 100ml to play with!). When it cools, it should get thicker. Add sugar or cinnamon to your taste before placing it in the fridge. Serve it and enjoy it without guilt!
