INGREDIENTS:
- 3/4 cup of sugar
- 1 cup of butter
- 1 L egg (or flax egg)
- 1/2 cup of oats
- 1/2 cup of cooked Quinta quinoa
- 2/3 cup of oatmeal
- 1 tablespoon of cornstarch
- 1/2 teaspoon of ground cinnamon
- A pinch of salt
PREPARATION:
1. Line a baking sheet and cover it with parchment paper. Prepare the oven, set it to 400F°.
2. In a mixer bowl, add the sugar and butter and mix them until it’s creamy. Add the egg and mix everything again. When it’s all combined, add the cinnamon, cornstarch, oatmeal and salt. Now, proceed to mix it using a wooden spoon.
3. When ready, add the oats and the cooked quinoa. Mix again with the spoon. Now, scoop out little amounts of mixture and place them into the baking sheet (make sure they’re not too close to each other)
4. Bake them for 15min or until they’re golden brown. Turn the oven off, wait for another 5min and then take the sheet out. And that’s it! You can have a delicious breakfast or on-the-go snack that will give you all the energy you need!
