INGREDIENTS
1 cup uncooked Quinta Quinoa
2 heaping cups cauliflower florets
1 cup chopped carrots
⅓ cup + 2 tablespoons nutritional yeast
¼ cup vegan buffalo sauce
2 tablespoons water
1 tablespoon hemp hearts
1 teaspoon miso paste (or gluten-free tamari)
1 garlic clove
1 teaspoon lemon juice
½ teaspoon ground black pepper
DIRECTIONS
Follow package instructions for cooking Quinta Quinoa.
In a separate pot, steam the cauliflower and carrots for 10 – 15 minutes, until tender.
Transfer the veggies to a blender along with the remaining ingredients. Blend on high until smooth and creamy.
Pour sauce as needed over the quinoa and stir to combine. Taste and season with a bit more nutritional yeast or buffalo sauce to amp up the flavor.
Serve immediately!
