Peanut/Almond Butter Quinoa Squares

As the calendar turns to November, stores everywhere begin to swap the shelves from Halloween products to Christmas and holiday items overnight. Many people also start getting into the Christmas spirit! Of course, part of getting into this mind-set beyond the movies and music, is all of the delicious and potentially ‘waist-widening’ treats and desserts! This time of year has everyone in the holiday spirit and it can become increasingly difficult to consistently eat healthy, especially when indulging in holiday desserts. Adding a super-food such as Quinta Quinoa to your favourite holiday treat is a great idea for those seeking a more nutrient-packed indulgence!

If you are only aware of quinoa being used in salads and as side dishes, then Quinta Quinoa as part of a sweet, yummy dessert may seem unusual. However, adding protein, fibre, and other valuable nutrients can provide a boost to those sweet treats at the end of the holiday meals!

Peanut/almond butter quinoa squares

Another deliciously healthy dessert/treat to bake for the holidays!

Ingredients (makes 12 squares)

  • 2½ cups quinoa crispies
  • ¼ teaspoon salt
  • ½ cup peanut/almond butter
  • ½ cup raw honey
  • 4 oz dark chocolate

Instructions:

  1. Mix the quinoa crispies and salt together in a mixing bowl. Line a baking dish with parchment paper.
  2. In a small saucepan, heat the peanut butter and honey. Stir until its melted and pour it over the quinoa mixture and add to the baking dish. Place in the refrigerator.
  3. Melt the chocolate and then remove the quinoa bars from the fridge and pour the chocolate mixture over them. Place them in the fridge until the chocolate is hard.

    1. Hi Janice, thanks for reading our recipe blog post! Quinoa crispies are essentially a crispier version of quinoa similar to rice crispies. They can be purchased in some health food stores or online however they can be expensive. Check out this blog post by Simply Quinoa for instructions on how to easily make your own!
