Spinach Artichoke Dip with Quinta Quinoa

Ingredients:

  • 2 cups cooked Quinta quinoa
  • 8 oz cream cheese, softened
  • 2 tbsp Greek yogurt
  • 1/4 cup heavy cream
  • 1/3 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 1 14 oz can artichoke hearts, chopped
  • 6 oz frozen spinach, thawed and drained
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups seasoned breadcrumbs
  • 1 egg, beaten
    Optional: dipping sauce of your choice (I used marinara sauce)

Instructions:

1) Combine all ingredients, except the egg and breadcrumbs.
2) Roll mixture into 1/4 cup balls.
3) Dip each ball in the egg, allow excess to drip off, then roll in breadcrumbs.
4) Air fry at 400°F for about 12-15 minutes depending on your air fryer! These could also be baked or fried.
