Strawberry Tabbouleh Salad

Here is my delicious Strawberry Tabbouleh Salad – a twist on traditional tabouli, this spring-inspired version is made with quinoa, parsley, mint, strawberry and cucumber.
Quinta quinoa is quite high in protein, so this could make a light meal.
It’s dotted with sliced strawberries, diced cucumber and fresh herbs, and dressed simply with olive oil, vinegar and lemon juice. It’s refreshing, light and packed with healthy ingredients.

Ingredients:

1 cup quinoa from @quintaquinoa
1/2 cup organic strawberries
1/2 cup finely diced cucumber
1/4 cup red onion, very finely diced
1/4 cup fresh mint, chopped
1/4 cup Italian parsley, chopped
4 tbsp olive oil
1 thsp vinegar
2–3 tbsp lemon juice
1/2 tsp salt, plus more to taste
fresh cracked pepper to taste
optional additions: feta, cheese crumbles, toasted pistachios, toasted almonds, avocado!

Directions:

  1. Add all ingredients to  bowl, mis until well incorporated, and enjoy!
