Quinoa Cocoa-Nut Bites

We all know that quinoa makes everything better! Team up with coconut and you’ll get this great recipe! INGREDIENTS

  • 3 cups of cooked #QuintaQuinoa
  • 1/4 cup of cocoa Powder
  • 1/3 cup of Maple Syrup
  • 3 tbsps of either creamy or crunchy peanut butter
  • 1 tbsp of coconut oil
  • 3/4 tsp of each ground cinnamon and vanilla extract
  • 1/4 cup of unsweetened shredded coconut

PREPARATION

1. In a large bowl, mix the warm #Quinoa with all the ingredients except the coconut. Make sure everything is evenly combined. (Note: it’s important to use the quinoa warmed, so the peanut butter and coconut oil can melt)

2. Prepare a baking sheet and cover it with parchment paper. Scoop out the mixture into small, bite-size amounts and place them on the baking sheet.

3. Take the sheet to the refrigerator for 40min. While it’s done, spread the coconut on a plate.

4. Once the time is up, take the baking sheet out, and roll the mixture with your palms until they are spherical. Then roll them around the coconut shreds until they’re all covered.

5. Take them back to the refrigerator until they’re entirely firmed.
